World’s First CO2-Washed Malt New Make Spirit A pioneering malt spirit where fermentation-derived CO₂ is used to amplify flavour.
By washing the new make spirit with CO₂ collected during fermentation, volatile aroma compounds that would normally escape are captured and reabsorbed.
Aroma & Palate: Whole wheat toast, white florals (narcissus), tropical fruits, and bright lemon citrusy.
Concept: After distillation, the malt new make undergoes a “carbonation spa” using CO₂ from actively fermenting wort. Aromas that would typically dissipate with CO₂—such as white florals, narcissus, tropical fruits, and citrus—are “washed” back into the spirit.
The process is like blowing bubbles into water after eating a mango—after 10 minutes, the water unexpectedly takes on a mango-like aroma.
Utilising Taiwan’s unique Grain-in fermentation technique, the spirit is double distilled in an enhanced Lomond-style still to produce malt new make, then further infused with aroma compounds recovered from fermentation CO₂.
