Taiwan’s first fully integrated urban craft distillery, located just a 7-minute walk from Nanshulin Railway Station in New Taipei City.
Situated within a vibrant lifestyle district, we encourage visitors to arrive via public transportation.
Why Shulin?
Shulin has a long history of distillation dating back to the Qing Dynasty, once home to numerous private distilleries. In 1906, one of Taiwan’s first legally licensed distilleries was established here. Taiwan Tobacco & Liquor Corporation also built rice-winery facility here.
Why an Urban Distillery?
Great distilleries are often closely connected to cities and people.
From Yamazaki Distillery in Japan, located beside a train station, to major Scotch distilleries such as Glenfiddich, Balvenie, Dalmore, Auchentoshan, Oban, Loch Lomond, Glen Ord, Springbank, Pultney... enables direct engagement with consumers.
We believe we should not be isolated—they should be part of everyday life.
Raw Materials
Malt & Grains
Our whisky production draws inspiration from traditional Scottish methods, using imported malted barley to align with familiar flavour expectations. At the same time, we explore Taiwan’s agricultural diversity—rice, corn, wheat, and more—to unlock new flavour possibilities.
Sugarcane & Molasses
Molasses from Taiwan Sugar Corporation Hu-Wei Sugar Mill
Taiwan was a key global sugar trading hub as early as the 17th century. Inspired by the island’s historical connection to rum and arrack, we develop fermentation and distillation techniques that express notes of sugarcane, brown sugar, and Taiwan traditional style shaved ice snack character.
Our signature profiles— "Grass-jelly" and “Herbal”—capture the essence of Taiwan. One sip, and you’ll understand.
Yeast
We work with industry-recognised M-series yeast strains, alongside Taiwan-native yeast PD39A, developed in collaboration with Academia Sinica.
Different raw materials + environments + metabolic pathways = infinite flavour possibilities. Mastering yeast is key to unlocking them.
Water
Our water profile is soft, sourced from upstream regions leading to Yuan-Yang Lake Nature Reserve, Smangus Giant Trees Area, and Mt. Dabajian
Equipment & Engineering
Guided by formal Scotch whisky training, our team has designed, built, and operated over 10 large and small distilleries globally, and visited more than 200 distilleries, cooperages, and production facilities. These experiences have been distilled into the design and engineering of Funny Distillery.
Our goal is to create distinctive Taiwanese rum and whisky.
Achieving this requires:
1. Flexible grain selection
2. Precise fermentation temperature and timing control
3. Dynamic distillation adjustments (reflux, plates, speed, copper contact)
4. Careful spirit cuts
5. Advanced cask finishing strategies
All to craft layered, expressive, and memorable spirits.
We also integrate energy efficiency and sustainability into our distillery design.

Reversed Step Mashing
The world’s first mash design tailored specifically for Taiwanese grains.
Process includes:
1. High-temperature gelatinisation
2. Mid-temperature saccharification
3. Protein rest
Maximising the release of fermentable sugars from grains.
Controlled Grain-In Fermentation & Heat Recovery
We fine-tune fermentation flavours through yeast metabolism. Grain-in fermentation enhances malt richness and oiliness.
A dedicated heat recovery system captures residual heat from distillation and reuses it in fermentation, reducing energy consumption by up to 24%[1].

Advanced Lomond-Style Still
Based on the traditional Lomond still design, we have:
1. Improved plate structures and agitation
2. Increased reflux control
3. Achieved higher purity in a single distillation
4. Additionally, we reuse residual heat from second distillations to improve efficiency.
The system integrates copper and stainless steel, optimising copper contact ratio—achieving a surface ratio of 9.33, significantly above the industry average of 4.95–6.58[2].

Our Wood Policy
Casks are essential to both whisky and rum maturation, shaping aroma and flavour.
We collaborate with cooperages in the US, France, and Spain, working experience more than 52 types, 300,000cask.
Our approach is to simplify the complexity of unique cask strategies for each product. Cross-maturation techniques are applied to create bold, distinctive, and character-driven spirits.
