1,300 LMODIFIED LOMOND STILL

A modified Lomond still with adjustable reflux, plates and run conditions — up to four rectifications in a single distillation. A central copper purifier lifts the copper-to-wash ratio to 9.33, above the 4.95–6.58 typical of traditional Scotch stills.

01 / INGREDIENTS

Ingredients

Molasses from Taisugar's Huwei mill, distilling malt from Scotland and Europe, top-grade M-series yeast and PD39A — a Taiwan-native yeast selected with Dr. Isheng Tsai at Academia Sinica. Our soft water traces back to the forests around Yuanyang Lake and Smangus.

Casks and maturation

New American oak, French oak and Spanish sherry casks each bring their own aroma and texture. Our team has worked with US, French and Spanish cooperages across more than 52 cask types and 300,000 casks.

How flavour forms

Temperature-controlled on-grain fermentation, reflux in the still and the cask all interact. From the brown-sugar notes of molasses to the floral fruit of experimental new make, every flavour has a source.

Recovering distillation heat

Heat recovery and two-stage condensing send distillation heat back into mashing, cleaning and sanitising. Our stillage heat-recovery tank pre-warms the next wash and cuts heating energy by about 24%.
